TOMATO SAUCE : A simple recipe

Among the Five mother sauces, Tomato sauce is my favorite. Classic, Creole, Provencale, etc... It seems perfect for everything- pasta, rice, pizza, chicken or fish. So I thought of sharing this simple tomato sauce recipe that I usually cook when my craving kicks in- best served with toasted garlic bread on the side.

Ingredients:
150g              Uncooked pasta, I use Penne / Fusilli (cooked in boiling water for 10 mins)
400g              Ripe tomatoes (diced & seeds removed)
                      Fresh basil, lots of it. (You may also use dry basil)
4 cloves        Garlic, minced 
1 medium      white onion, chopped
1 tbsp.           Balsamic vinegar
1 cup             stock

Procedures:
1. Cook your pasta.
2. Saute Onions and garlic in 2 Tbsp. of Extra Virgin Olive Oil. Do not burn the garlic!
3. Add 1/3 of the basil. Simmer for a minute.
4. Add the Balsamic vinegar and simmer again for few minutes.
5. Add your tomatoes, mix well. Add 3/4 cup of water and stir.
6. Add salt and pepper to taste. 
7. Add the remaining Basil. Continue stirring until sauce is thick, approx. 15-20 mins. adjust according to your taste.
8. Toss in your pasta, mix well and serve with Parmesan on top. Bon Appetit!

* You may also add Grilled Chicken breast or Shrimp for a more flavorful pasta.
